Distilled monoglycerides (DMG) are among the most widely used emulsifiers in the food industry. From baked goods to ice cream, from margarine to chocolate, DMG quietly supports the texture and stability of countless food products.
The production of DMG starts with oils and glycerol.
Under the action of a catalyst, oils (triglycerides) react with excess glycerol through transesterification, producing a mixture of mono-, di-, and triglycerides. Among these, monoglycerides are the target product — but they typically make up only 40–60% of the crude mixture.
To obtain distilled-grade monoglycerides with purity above 90%, molecular distillation is the essential step.
Under high vacuum conditions, monoglycerides — having a higher vapor pressure — are preferentially vaporized and condensed, separating them from di- and triglycerides and other byproducts. This process is gentle and efficient, requiring neither excessively high temperatures nor long processing times, ensuring product purity, light color, and functional stability.
The high-purity monoglyceride melt is then converted into a solid powder through spraying or granulation, cooled, and packaged — becoming a key raw material for the food, pharmaceutical, and cosmetic industries.
